Get ready to wrestle with an octopus (figuratively, of course) in the kitchen, because we're diving into the octopus couscous extravaganza! 

We asked Wiem at Barclay's Group Travel about his favourite dish from Tunisia and couscous with octopus was the winner.

Ingredients Couscous with Octopus:

  • 500 g fine or medium couscous
  • 500 g octopus (Don't worry, we've got a big stick for this!)
  • 2 potatoes
  • 2 carrots
  • 1 glass of chickpeas, soaked the day before (We'll let them marinate in regret for a bit.)
  • 2 onions, chopped (They'll be shedding tears of joy once they meet our spices!)
  • 2 cloves garlic, minced (Time to unleash the garlic breath!)
  • 1 tbsp. tomato concentrate (Because tomatoes need a little spotlight too.)
  • Harissa to taste (Warning: May cause spontaneous combustion!)
  • 1/2 tablespoon paprika (For that smoky kick)
  • 1 teaspoon turmeric (Because who doesn't love a golden touch?)
  • 2 teaspoons coriander and caraway (We're taking these spices on a joyride!)
  • 4 tbsp. olive oil (The MVP of the kitchen
  •  Salt, pepper (To keep things spicy)
  • 3 hot peppers (Handle with care, unless you're feeling adventurous!)

Preparation Couscous with Octopus:

Channel your inner wrestler and give that octopus a good beating with a large stick. It's octopus tenderizing time!
In a couscous pot, heat up the olive oil and put in the chopped onions; let it sizzle.

Add garlic, harissa (the spicier, the better!), octopus and spices. Everybody on board for a party in a pot!

Let flavors simmer with tomato concentrate for 5 to 10 minutes. It’s like those mini concerts of spices inside it!

Put these soaked chickpeas in now! Salt and pepper generously, season and allow them to take up all that taste like sponge does.

Chop up some potatoes, carrots as though you were on a cooking show while the sauce is working its magic. Show them who wears trousers!

As the sauce simmers away, we can take care of our own couscous. Rub grains between your hands as though you are polishing a genie lamp. Abracadabra! Couscous magic.

Lastly, transfer your couscous into a couscoussier and let it steam for thirty minutes. For your grain, this is similar to one hot spa day.

Arrange the whole cooked thing nicely into one large dish that has drizzled saucy goodness over it – get ready for tasting greatness!

Top with garnishes such as pieces of octopus, potato or fried chilies that will make your taste buds happy dance around .It feels like watching the grand finale of culinary circus.
